gatherings after funerals
or "Ward dinners"
or big crowds (read: big mormon family gatherings)
with Ham, rolls, salads and of course Jello.

Use approximately 6 cups diced potatoes (best if they are baked, cooled, peeled and diced)

mix:
1 can cr of chicken soup (or mushroom)
1 stick of butter melted
1 c sour cream
2 cups grated cheddar cheese
1/4 c. finely minced onion
salt & pepper to taste
add potatoes and place in a 9 x 13 baking dish (greased)
Bake at about 350 for 35 - 45 minutes uncovered
Traditionally they are topped with crushed corn flakes tossed in a little butter...adds a nice crunchy texture.
