PENNY SOUP


Penny Soup, which I first learned about by reading Pulitzer Prize winner Anne Tyler, is called so because of the round pieces of vegetables that resemble coins....a fun name for kids---Penny Soup as opposed to vegetable soup.
Other people call it Autumn Soup because it is made with vegetables harvested out of our gardens last.
I used the following approximately:
1 sweet potato
1 yam
1 large carrot
1 zuccinni
4 tiny new red potatoes
4 mushrooms
1 parsnip
2 leeks
melt 2 T. butter and 2 T. EVOO
into a large saucepan or dutch oven size pan
heat til bubbly
add the vegetable rounds (1/4" thick or so)
saute to brown slightly
While this is going bring 1 Qt or more of vegetable broth to a boil
and pour over the vegetables
bring to a boil
turn down heat and
let simmer a few minutes until done about 8 to 10 minutes
don't over cook...tender not overdone.
Drain broth off of vegetables
Put broth into a blender with about 1/3 of the vegetables and puree
add all ingredients back together
YUMMY! Heavenly!
All it needs is some homemade rolls and butter
this is truly the best soup I've ever flopped my lip over. How did I get to be 58 years old and I've never had it before????
